1. Baigan ka Bharta
Enjoyed by both vegetarians and non-vegetarians, 'Baigan ka bharta' is a famous eggplant (aubergine, more commonly known as brinjal in India) recipe. Indian cooking cannot get more traditional than this.
You start off by roasting the eggplant fruit directly on fire (
picture on the right) and then
cooking it with spices and other veggies (peas, onion, bell peppers, tomatoes, mushrooms... the list could be endless depending on what you like).
2. Gajar ka Halwa
Ghee + carrots + badam + cashew nuts + half & half + sugar + maa ka pyar = gajar ka halwa.
Gajar ka halwa is the most popular Indian dessert specially in winters.
My brother once remarked to me that if I ever were to bear a son, I should name him 'Haldiram'. Given the amount of food he will have to his disposal, he will likely bear a resemblance to the famous Indian food mogul.
Just happened to come across your page and must say that being an Indian myself, reading this post make me miss my Mom so much..she used to cook amazing bhartha..I am in San Diego on a long term assignment and all the more reason for me to miss India.
