Gourmet Indian Cooking

1. Baigan ka Bharta

Enjoyed by both vegetarians and non-vegetarians, 'Baigan ka bharta' is a famous eggplant (aubergine, more commonly known as brinjal in India) recipe. Indian cooking cannot get more traditional than this.

You start off by roasting the eggplant fruit directly on fire (
picture on the right) and then
cooking it with spices and other veggies (peas, onion, bell peppers, tomatoes, mushrooms... the list could be endless depending on what you like).

2. Gajar ka Halwa

Ghee + carrots + badam + cashew nuts + half & half + sugar + maa ka pyar = gajar ka halwa.

Gajar ka halwa is the most popular Indian dessert specially in winters.

My brother once remarked to me that if I ever were to bear a son, I should name him 'Haldiram'. Given the amount of food he will have to his disposal, he will likely bear a resemblance to the famous Indian food mogul.


1. French Crepes:

My flat-mate had a friend from France visiting US last month, and she stayed with us for a week. Apart from her uber cool French accent, I loved how easily she made amazing crepes. She was kind enough to teach me, and below is what I made for myself today. The cooked apple and plums can be drizzled with honey and sugar if that's how you like it.

2. Spicy Indian pancakes:

The picture below is one of the most popular north Indian breakfasts. We call them "Cheelay". They are spicy depending on one's preference. I love the ones with fresh green chillies - just the right amount to make your senses tingle!
